Persian Lentil Rice (Adas Palau)

Although most Persians will make this rice with minced meat I’m posting my vegetarian version. There are instructions for how to add meat at the end of the post, though I must say my DH seems to like the veggie version better and he’s the biggest meat eater I know!

Persian Gourmet Vegetables

A Persian dish of lemon and fenugreek spiced greens known as ‘Gormeh Sabzi’. Traditionally served with lamb, this recipe has been made vegetarian – but feel free to add some lamb when you fry your onions. Freeze any left-overs for another day – this recipe only gets better!
